The Brown Derby is a classic bourbon cocktail that is lightly sweetened with honey - just enough to take the edge off the grapefruit juice.  The herbaceous notes of the honey pair well with either sage or rosemary.

Brown Derby

2 oz.  bourbon

1 oz. fresh squeezed grapefruit juice

1/2 oz. honey sage syrup*

Shake all ingredients in a cocktail shaker.  Strain into a coupe glass.  Garnish with sage leaves.

*Honey Sage Syrup

Mix equal parts honey and water in a small saucepan.  Heat unit almost boiling.  Remove from heat.  Add sage leaves.  Let steep til cool.  Strain leaves and refrigerate syrup for up to two weeks.

bar tip:  rosemary makes a fine substitute sage
