Candied citrus peel

I like Candied citrus peel in salads, oatmeal and for garnishing cocktails. Citrus peel is high in essential oils and packed with flavor.  Why let it go to waste?

to candy orange peel, first cut the orange into 1/2" segments from top to bottom or stem to navel.  separate the juicy parts from the peel by using a paring knife and removing as much white pith as possible. 


Bring water to boil and add peel.  Boil for 15 minutes. Drain. Rinse. Repeat.

Bring 3 cups sugar and 3 cups of water to a boil.  Add peel and boil for 45 minutes or until the peel is tender and soft.  Allow to cool. Drain, reserving syrup for another use.  Toss strips of peel in one cup of sugar.  place strips on cookie rack over cookie sheet to catch sugar.  Allow strips of peel to dry for a couple of days.  Store in a glass jar.  Will keep for many months.
