Wild Flora Honey and Citrus Vinaigrette

The salad dressing you can't live without


2 T Wild Flora Honey

1 tsp lemon, lime, or orange zest

2 Tbs orange juice (optional)

4 Tbs lemon or lime juice

1/2 tsp Dijon mustard

1 small clove garlic, minced

1/2 cup extra virgin olive oil

1/2 tsp Kosher salt*

Freshly ground pepper

*(I prefer Diamond Kosher.)

You'll need a small glass jar with a lid. Add all the ingredients to the jar except olive oil.  Stir until honey is dissolved.  Add oil.  Add one ice cube and put the lid on the jar.  Shake vigorously until the dressing has emulsified, about 30 shakes.  Remove ice cube.  Refrigerate until ready to use.  Makes 3/4 cup of dressing.
