Make honey mint simple syrup and get it cold.
Chill the julep cups.
crush the ice and keep it dry
Muddle fresh mint leaves in chilled cup.
fill with crushed ice.
add 1/4-1/2 oz Honey Mint syrup
top with bourbon-about 2-2 1/2 oz.
give a quick stir.
Garnish with a sprig of mint.
Honey Mint Simple Syrup
Combine equal parts honey and water in a small saucepan and bring to a. boil. Turn off heat. Add a handful of fresh mint leaves. Let steep until it's cool. Strain into a small jar. Label and refrigerate until ready to use.
