Gallbery, or Inkberry, is a native evergreen holly found growing in wetlands and sandy bogs in the Southeast Atlantic and Gulf Coastal Plains. Native Americans roasted and brewed the leaves for tea. It's white flowers produce small, glossy black berries. Gallberry Honey tastes mildly herbaceous with notes of molasses.
