Simple syrup basics
honey syrups are made by combining equal quantities of honey* and water. put these two ingredients in a small saucepan and bring to a boil, stirring until honey is completely dissolved. Turn off heat.
For flavored or infused simple syrups, add a few sprigs of your favorite herb, citrus peels, or spices. Let these steep in the hot syrup until it cools (or overnight). Strain and refrigerate in a lidded glass jar until ready to use. will keep for a couple of weeks.
*molasses, sorghum, agave, and sugar also work well
